"I learned from cider maker Aidan Currie that the company's first public tasting room will open this spring, and their flagship will have 24 taps — 12 specifically dedicated to Swift ciders — while also serving products from neighbors like Happy Mountain Kombucha and Gron CBD drinking chocolate. Currie plans to offer occasional fermented experiments, including a CBD soda, and I'm particularly excited about their single‑varietal ciders, which guests can taste individually or build their own blend at the cider house’s blending bar. A gluten‑free restaurant is planned to follow, and Currie says the kitchen should be 100 percent gluten‑free." - Brooke Jackson-Glidden
