"Local mobile food-trailer operators Mandie Gilbert and Lyndsi Lillis are opening their first permanent location at the Skye Canyon residential development in Centennial Hills, moving into the former Skye Bistro and debuting on Saturday, July 9. The shop will be open daily from 7 a.m. to 2 p.m., with indoor seating and a patio, and — though connected to the residents' building — will be open to the public. The menu leans health-conscious and includes avocado, caprese, chocolate-hazelnut-berry and banana-almond-butter toasts; daily pastries; keto-friendly cookie-dough bites and lemon bars; smoothies and bowls; and a kids' menu featuring honey-lavender, snickerdoodle and white-mocha flavored milks. Beverages are poured into eco-friendly cups and range from a superfood drip coffee and locally roasted nitro cold brews to turmeric- and matcha-enhanced lattes, plus organic teas and hot cocoa." - Bradley Martin
