Look don’t get me wrong I really respect the owner being from the mother land and just how good he is at taking money off lower middle class English people. He is however extremely lucky that he is catering to the masses, who are totally fascinated with how the staff pour Guinness. It feels like he walked into the French house a few streets over, immediately took a Ryan air flight over to Dublin and walked into Doheny & Nesbitt on baggot st and said to himself “I am going to combine the two”. It’s good but it’s not great. Waiters lack confidence, no supervision, aircon so loud you can hear it. It lacks character and a decent supervisor to ensure it’s running smoothly. Only in 2024 can this bar come restaurant sort of succeed. I can only admire it.
