"Started as a food truck on Water Street in Princeton, the café grew into a neighborhood destination thanks to lines for creations like the Capri — a ciabatta embrace of fresh mozzarella, tomato, and pesto — and an expanding menu of dressed-up sandwiches, salads, and cocktails. Owner Matt Trotter says, "I really just wanted to honor the bread being made by Renard’s Bakery [down the street] and sandwiches was the best way to do that," and adds, "We like to keep it fun and funky." Menu highlights include the Capri and the Midwest Beet (a sandwich interpretation of a beet and goat cheese salad); guests can sit at the bar or on the patio where live music drifts with the gentle rush of the Fox River.
