"Mechela’s simple kitchen is remixing traditional Andalusian dishes with French, Mediterranean, and Cajun flavors. The results are a mashup that’s nothing short of spectacular. Here, melt-in-your-mouth venison is topped with a dollop of cinnamon apple puree. Hearty, fresh salads—practically nonexistent in Seville—combine well-spiced, roasted sweet potatoes with goat cheese and top them with red onions and peaches to create a sweet-and-savory carnival in your mouth.
