"Something about watching beef patties smashed on a grill within an inch of their lives gets our heart rate racing. And the burger-making station at this in-and-out style spot by Tottenham Court Road station makes for a pulse-quickening show. The chefs rush around, throwing potato bun bottoms in takeaway boxes, while another fills the huge griddle with perfectly round wagyu patties, before smashing onions into them, and topping with American cheese while it’s still sizzling. That way you’ll get to enjoy the charred, meaty edges, creamy, spicy ‘special sauce’, and crispy shallots before they turn soft. Two flattened wagyu patties have onions melted into them, and they’re stacked with gooey layers of orange cheese melted between them, and messily thrown in pickles and jalapeños.
