There are usually two versions that stick around on the menu (with little tweaks here and there): the ricotta gnocchi and the tagliolini. The latter is the only pasta in town served cold. It might sound odd at first, but it works in a city that constantly feels like a sauna. Reservations go live on Resy at noon 30 days in advance.
