Dishes like cheesy enfrijoladas, chilaquiles in tangy salsa roja, and huevos rancheros are all solid ways to get your egg fix. But if you still really want to get some french toast involved, their churro version dusted in cinnamon sugar and topped with cajeta makes a great brunch dessert (yes, every meal deserves to have a dessert).
