"Nanking Ramen is a tiny counter at Figurehead Brewing that specializes in shio ramen. It's right next to Midnite Ramen, but don’t worry about any noodle turf wars—both spots are owned by the same folks and offer different experiences. Though Midnite is better overall, Nanking nails a minimalist approach with its two soups. One is a light, delicate chicken and seafood broth that’s almost transparent. The other is a thick curry ramen with fall-apart braised beef. Their small plates include a sushi roll with potato chips mixed in that get soggy fast, but the juicy shumai are worth ordering and taste even better dipped in broth.
