"Designed to appear like a modern version of an early-20th-century Czech pub, Vyčep announces itself with a beer counter (a vyčep, in Czech) at the entrance.Refreshingly, this gastropub in Vinohrady breaks the Pilsner Urquell hegemony by serving a full-bodied lager from the small town of Dalešice in Moravia. Walk around the bar and you’ll be in the brick-walled dining room where the chef serves elevated dishes from his home region of Moravské Valašsko, or Moravian Wallachia, a province on the Czech-Slovak border. The menu changes with the season, but expect things like tender buns filled with short rib or roasted lamb drizzled with a sauerkraut and bacon sauce, wild boar meatloaf, or fire-grilled rainbow trout doused in a tomato beurre blanc." - David Farley
