"The quality justifies the high prices at this temple to French cheese perfection. At Laurent Dubois in the Marais, the house creations are works of art. The refrigerated cases outside the fromagerie are stocked with Roquefort sandwiched with quince paste, and fresh goat cheese topped with yuzu and timut pepper. But don't sleep on the classics: The artisan sheep’s milk tommes from the Basque region are rich and nutty, and blue cheese fans will keel over at just one bite of their ultra-aged Fourme d’Ambert. Free samples aren't guaranteed, but you’ll often find little buckets of expertly aged Comté to try.
