"If the Mad Hatter owned a restaurant in Downtown Las Vegas, it would be Palate, with velvet chairs and oversized chandeliers fit for a fantasy ballroom. It’s the perfect setting for homestyle Southern food punched up with quirky, all-over-the-map influences. Think scallops with black garlic grits and fall-apart, soy-glazed charred short ribs. The cocktails are video-worthy, like the Lucy In The Sky, served in a mushroom-shaped glass next to a pile of steel wool that glimmers—yes, like diamonds—after it’s set on fire. The food makes for great fuel before or after a show at Swan Dive upstairs, and the brunch goes hard, too.
