"It's about an hour from Miami to Swamp Water Cafe. And you’ll have to drive down a windy road in Big Cypress (one of six Seminole Tribe reservations in Florida) to get there. They have frybread with honey butter and indian tacos on the menu—though, if you want the full gamut of Indigenous food, you’re better off visiting one of South Florida’s Native festivals in the winter. But Swamp Water’s bison burger is phenomenal, and you can eat it while sitting on the patio with a view of wading birds hunting for fish among the swamp lilies and spatterdocks. The staff says there are even a couple of bison that were released into the wild roaming around. Don’t tell them what’s in the burger. Food Rundown photo credit: Virginia Otazo Frybread Frybread is typically pretty heavy, but Salt Water Cafe’s is so hefty, you’d have to pay extra to check it on a plane. It comes out piping hot and instantly melts the side of sweet honey butter it comes with. photo credit: Virginia Otazo Indian Tacos Here, that same frybread acts as the landing pad for chili, diced tomatoes, lettuce, and a big mound of shredded cheese. It’s not shaped like your run-of-the-mill Mexican tacos.
