21 Classic Restaurants In Mexico City

"Before Roma became crowded with restaurants, Máximo was already there: a petite bistro spotlighting seasonal ingredients cooked with perfect French-American technique (and sometimes lots of butter). Fame arrived quickly, and eventually, they moved to a larger space on Álvaro Obregón, and their prices increased considerably. However, the commitment to using the best available ingredients and maintaining rich flavors remains unchanged. Dishes like the onion with comté cheese and cruffin showcase their confidence in both approach and quality products. They often feature a delicious chicken dish worth trying, as well as pastas with rich, slow-cooked sauces that’ll leave you eager to lick your plate. For first-timers, roll with the nine(ish)-course tasting menu." - mariana camacho
