"Komal, a new casual spot in Mercado La Paloma from two members of the Holbox team, is a molino, tortillería, and restaurant rolled into one. Komal is all about corn, which it nixtamalizes and grinds in-house to make fresh masa that’s turned into various antojitos. The daytime menu includes squash blossom quesadillas, tlacoyos stuffed with ayocote beans, and longaniza tacos made with fresh-off-the-comal tortillas (which you can buy by the pound).
