"You’re right to be skeptical of a Cajun restaurant on the side of a highway very far from Louisiana, but Cajun Kate’s will prove itself to you. The gumbo has a perfectly browned roux as the base, and the crab cakes are handmade and generously filled. And while the po’boys are enough to serve several people, you’ll definitely want your own.
