"A poster of two dazzling ballroom dancers behind Pho Filet 2’s register reads, “Live Happy, Eat Phở Daily, Dancing Is The Best.” We wholeheartedly agree. And we believe, with the same passion as that poster, that this casual Viet spot in Rosemead makes the richest, most aromatic broth in the LA area. Pho Filet’s fluorescent-lit dining room has long communal tables where families slurp chewy rice noodles. If you show up on the weekend, don’t let the crowds scare you. The waitlist moves quickly, and once you order, the phở arrives even faster. (FYI the OG Pho Filet is two miles away if you don’t care to wait, but it’s also smaller.) The rich beef broth here is opaque and fragrant like a double-steeped tea, with green onion and star anise immediately greeting your nose. All of those aromatics soak into whichever cuts of meat you order with your noodle soup, like ribbons of gently cooked brisket, jelly-like tendon, or, if you’re particularly hungry, a whole short rib jutting from the bowl like an iceberg. Pho Filet’s non-soup dishes are great, too, including their football-sized bánh xèo packed with shrimp, but those are best suited for group meals or people with extra stomachs. For a solo meal here, always follow the poster’s advice: eat some phở today. photo credit: Sylvio Martins Food Rundown Chỉn Nám Gấu Gan Sách This is the phở version of a meat lover’s pizza. You’re getting an anatomy tour of Elsie the Cow, with hunks of brisket point, tripe as soft as satin, and jiggly tendon that’s been nearly reduced to Jell-O from the hot seasoned broth. photo credit: Sylvio Martins Phở Sườn Bò The short rib pho only comes in the largest size, because handling these tender ribs requires both hands at the wheel. Between this big bowl of soup and giant ribs, this dish feeds two. photo credit: Sylvio Martins Bánh Xèo Pho Filet 2’s bánh xèo is stuffed like a turducken with beef, plump shrimp, and bean sprouts. The crispy rice pancake glistens but isn't oily, and a large assortment of herbs and lettuces for wraps comes on the side. Order this as a starter for a group meal. photo credit: Sylvio Martins" - Sylvio Martins
