It’s the only salad on the menu, and is usually covered by a quilt of parmesan or pecorino. Below all that cheese, you can expect subtle, seasonal changes—but always a balanced flavor seesaw that swings from sweet to salty. It’s crunchy, vibrant, and a textural experience akin to walking down a gravel path in hiking boots. The last time we ordered this, it consisted of long spaghetti strands of fresh green papaya as well as sweet, chewy bits of candied papaya.
