"You’ll need to ring the doorbell to get into this raw fish speakeasy with a VIP party atmosphere, and when you do, you’re greeted with a Toki whisky welcome cocktail in the blue lagoon-style space. Bellied up to the 10-seat counter, people have no problem letting the host know that their seared red king salmon sprinkled with matcha salt and pickled wasabi stem is “f*cking amazing,” while chefs keep up a constant patter. The nigiri toppings are terrific, too. Red beet mustard, lemon, and toasted quinoa complement the saba, while a swipe of sweet corn pudding and crackly sourdough breadcrumbs give hamachi personality.
