"It’s easy to get overwhelmed by the near-infinite sauces, toppings, and gelato flavors on the build-your-own menu at MadLab, a kakigori counter that shares a space with Cafe Sebastian inside the Transamerica Pyramid. When you start hearing the chorus of impatient throat clearing as the line grows behind you, we suggest picking one of the six solid pre-set options: generous foundations of gelato topped with a mound of freshly shaved ice that’s soaked in syrup and crowned with whipped cream, sprinkles, or even a poofy cloud of cotton candy. The piña colada version in particular, with passion fruit and mango gelato, pineapple-coconut-makrut-lime syrup, and whipped cream, is punchy and well-balanced. Or, go with the OG Itameshi, which is sweeter and equally as dialed in with a rich pistachio gelato and cherry lilikoi syrup that get a savory-sour hit from a swirl of salted yuzu whipped cream.
