"We want to be a Hokkaido cow in our next life. They have it pretty good, or so we imagine after sampling their goods at Indigo Cow in Echo Park. This soft-serve shop from Seattle sources its dairy directly from Japan, which might sound like a gimmick until you try their signature milk flavor. It’s incredibly light and silky with a subtle sweetness that needs zero embellishment. If plain frozen milk doesn’t sound like your thing, there’s also a not-too-sweet matcha flavor (and a milk-matcha swirl), toppings like mochi and nutty roasted soybean powder, and the option to cap your cup with creamy Japanese sweet potato puree that’s brûléed to order. Indigo Cow tends to attract a nighttime crowd along Sunset after dinner, so get your milk fix during the afternoon to avoid a line." - Sylvio Martins
