"The Show: Poularde Homardine, Sauce Nantua In 2024, Martha Stewart posted about her dinner at Maison Barnes: a lobster, stuffed into a chicken. The internet went crazy. Obviously, we had to try it. Our chobster looked a little bit different from Martha’s though—it was a whole chicken, dressed in lobster-shaped armor. The golden appendages are whisked away, leaving the naked chicken, which is then carved tableside. A lobster head is extracted from its cavity, pressed for a few drops of juice, and a bisque is whisked is in front of you—but mostly this is just a jarring chicken carving.
