"Visiting France in the 2000s, chef Kikuchi was deeply impressed with the ‘bistronomy’ that was sweeping Paris at the time. He made up his mind to focus on this fusion of casual bistro fare with refined gastronomy. Bouillabaisse rich in the flavour of shrimp and Paris-Brest, a pastry, are prepared with loving memory of Kikuchi’s mentor.
