"The restaurant’s name, meaning ‘one-twentieth’, refers to the owner-chef’s birthday, January 20. Using a base of clear soup made with free-range chicken, salt-, soy sauce- and miso-flavoured ramen are available. First-time visitors are recommended to try the Shio Soba, which combines shellfish, katsuo-bushi and kombu. The owner-chef’s culinary skills shine in this artful blend of umami-rich flavours. True to his Asahikawa roots, he uses lard in his miso ramen for a Sapporo-style flourish." - Michelin Inspector
