"Sustainability is the name of the game here. As well as drawing on fairtrade and organic produce, the chefs source ingredients locally wherever possible. The result is bold, flavour-rich dishes replete with interesting culinary combinations. Chef Julian Marti showcases his signature style in creations such as his wonderfully creamy risotto-style spelt with smoked eel, Swiss chard and dill – fantastic! The food takes the form of a four- to seven-course set menu – a vegan version is available by prior arrangement. In keeping with the modern cuisine, the dining space of this small restaurant on a corner plot has an appealingly minimalist design, for an urban, international feel.
