Though Maximo has only been here for a handful of years, they're making a mark, both for the chef and his fascinating life story and for his internationally influenced Mexican cuisine, offered as a tasting menu and à la carte. Bread with roasted eggplant with a pleasant charcoal essence arrives after you take a seat, then slices of kampachi with avocado cream have just a hint of spice.
