"Eager to court the local community, the chef gave top billing in the shop name to familiar ‘chukasoba’ (ramen). Soup combines meat and seafood dashi for a deep, satisfying flavour. Kaeshi (a mixture of soy sauce, sugar and mirin) is supplemented with squid and fish sauce, enhancing umami. The low-hydration noodles are boiled only briefly, yielding a pleasing al dente texture that lets the flavour of the wheat come out.
