"‘Shiomachi’ means waiting for the right tide to push out to sea. The name expresses the owner-chef’s wish to create a shop where people congregate, just as fishermen gather to await favourable conditions. Yearning for the sea, the chef was drawn to a job where he handles fish. He visits Toyosu Market daily, ever on the lookout for that once-in-a-lifetime catch.
