"One of the meanings of ‘nôl’ is a contraction of ‘new normal’. Tatsuya Noda’s dream is to care for people and the environment while pursuing a new standard for the future. Perhaps that is why he refers to the dining room as a ‘kitchen space’. Taking cues from his childhood, such as his grandmother’s pickles and his mother’s roasted rice, he interweaves the food cultures of France and Japan.
