Diners can indulge in creamy local mountain nettle cappuccino, superb roasted white asparagus, whether tangy with candied citrus fruit or in a sabayon sauce, or lightly smoked Mediterranean tuna served confit-style and subtly counterbalanced by the herbal notes of oxalis.
