"ALTER EGO is the Tokyo outpost of Yoji Tokuyoshi, who runs the main location in Milan. The walls are the same shade of green as the original, and the concept is ‘Italian food with Japanese ingredients’. Examples of their approach include frit of shiitake mushrooms coated with salted and dried grey mullet roe, and bamboo shoots brushed with fish sauce and grilled. Ingredients such as firefly squid, sakura shrimp and Yezo deer are paired with either handmade or dried pasta, depending on the texture desired." - Michelin Inspector
