Two brothers run the restaurant, Giancarlo Camanini taking care of the dining room with great amiability, Riccardo the kitchen. There are two tasting menus to choose from: History and Oscillations, each in turn in five- or seven-course versions. In the former you will find the chef's classics listed, the latter is blind, the dishes come as a surprise and are more markedly seasonal.
