Owners Ivan and Gabriela pay serious respect to the art, culture and history of the slightly less popular corn tortilla, which they make on-site, entirely from scratch. There’s a real focus on culture here, with educational art adorning the walls and frequent event nights. All ingredients are sourced sustainably, and where possible, locally. Maizal have partnered with a farm in Ontario to produce their own corn, and with educational institutions to expose students to their practices. Their efforts have been recognised with an award for agri-food innovation excellence.
