"Edo Kobayashi, who grew up in the city of Ensenada, on Mexico’s Pacific coast, opened Hikoyo — an intimate izakaya-style counter in Mexico City’s Cuauhtémoc neighborhood not far from the Japanese embassy — nearly 10 years ago. “I saw the opportunity to bring yakitori, and later sushi and ramen,” Kobayashi says.
