L'atelier des gourmandises Créé au 19ème siècle, la chocolaterie Florian, dont Matisse était un habitué, est devenue confiserie en 1974. Cette boutique est la vitrine en ville de la maison-mère de Pont-du-Loup. Même esprit, mêmes saveurs, mêmes spécialités. On y trouve les clémentines confites du pays de Vence et la gamme de fruits confits de Florian, abricots, angéliques, ananas, cerises, pêches, poires, prunes et melons confits, ainsi que les fleurs cristallisées, orangettes confites au chocolat, amandes cacaotées, confits de fleurs, confitures d'agrumes... Trois ateliers s'offrent en vitrine à la vue des passants. Dans l'atelier de chocolaterie sont confectionnés les intérieurs de chocolats maison (pralines, pâtes d'amande, feuilletines) avant d'être recouverts d'une fine couche de chocolat noir. Dans le deuxième, on procède au glaçage des clémentines confites. Enfin, on fabrique dans un dernier atelier les bonbons acidulés.
