"The pizzas here are a must, made with stone-ground Castilian flours, Riojan vegetables, and Galician cheese. They get their signature chew from a novel leavening agent: wild yeast “waters” that the Sardinian pizzaiolo concocts using leftover fruit from the kitchen.
