"When this hip fine-dining restaurant opened in 2013, Smith Street was a scruffy place. Since then, Collingwood has become one of Melbourne's trendiest neighborhoods, and Saint Crispin now fits in perfectly. Half-a-dozen chefs rub shoulders and tap-dance in a tiny open kitchen, and that liveliness extends to the food itself: The pork jowl appetizer with eggplant, apple, and smoked pork dashi is truly invigorating, while the venison with smoked beetroot and radicchio is to-die-for.
