The dwaeji guksu came with a milky pork-bone broth sweet from long simmering, cradling simple wheat noodles and bite-sized pork belly, with a tangle of sliced Korean scallions on top and just seasoned radish shoots and short-fermented kimchi on the side. The slightly chewy thin noodles and meaty bites evoked Hakata-style ramen, though the clean, comforting broth was the star; I even eyed a bottle of Jeju tangerine-flavored makgeoli in the fridge and wished I didn’t have to drive." - Matthew Kang
