"From Aisha “Pinky” Cole, this new concept will occupy a central food-hall spot and emphasize theatrical, over-the-top beverage service: vegan riffs on classics like the margarita, cosmopolitan, old fashioned, and lemon drop martini; vegan beer and wine; nonalcoholic cocktails; and tableside presentations served in props such as a fire extinguisher, Ferris wheel, or gas can with musical sound bites. One signature drink, the Foreign Fruit Punch, is presented as an “active smokey volcano.” The program is billed as “bar theatre” and pairs its cocktails with casual vegan fare including sandwiches and salads, egg rolls, cauliflower wings, and popular items carried over from the founder’s burger restaurant.
