It’s helmed by chef Michael Tusk, who’s also behind three-Michelin-starred Quince, though Cotogna is relatively more relaxed. The raviolo is an experience: a single large filled pasta, which, when cut with a fork, breaks into fresh ricotta and golden egg yolk.
