"Known for vegetable-based, umami-rich vegetarian broths, this Japanese ramen chain plans to open a Houston location next year. Permits indicate it will occupy a 1,681-square-foot space at 600 North Shepherd Drive, Suite 515, with construction set to begin early next year and completion targeted for March 2021. The brand debuted in the U.S. in Los Angeles’ Little Tokyo in 2017 and later expanded to Redondo Beach and Santa Monica, and has announced plans for as many as five Houston outposts. Menu highlights include soy sauce, miso, and tomato broths, plus a “pearl ramen” whose broth is made with specialized Japanese rock salt and white soy sauce." - Amy McCarthy
