"Centered around an open hearth and an open kitchen, Kiln is the hotel's flagship all-day restaurant where Maienshein plans a menu that pays homage to generational fishermen and farmers in the region; he intends to intensely spotlight longtime local purveyors, even wanting to know the boat a fish came off of and the captain's name. The name nods to Alexandria’s first potter Henry Piercy, who built his kiln nearby in 1792, and pottery and plateware made by Old Town artists will add textured personality to the dining room. The beverage program will complement the food with a curated wine list alongside cocktails, bubbles, coffee, tea and botanicals, and the chef plans to lean on the nearby historic Alexandria farmers market for ingredients." - Tierney Plumb
