"Michelin-starred Nour is an exciting fusion of Japan and Scandinavia. The restaurant’s Thailand-born, Sweden-raised chef, Sayan Isaksson, expertly balances Japanese cooking techniques and ingredients with Scandinavian traditions and Nordic produce. As the foundation for its culinary creations, the kitchen produces its own dashi, koji, miso, smen, meatso, XO, and fish sauce using local ingredients. Three-, five-, and eight-course menus feature dishes such as turbot with aged beurre blanc, milk buns with vendace roe and sour cream, Swedish duck with sansho pepper and lavender, and the traditional Swedish dish kalvdans, made from unpasteurized colostrum milk, here combined with black Okinawa sugar and frozen amazake." - Per Styregård
