"A replacement for the shuttered Japanese street food restaurant Paid in Full is ready to debut in the southwest. Ton Ton Katsuya touts a Sunday, Sept. 22, launch at 11 a.m., but stil keeps many details under wraps. Overseen by self-described “restaurant stylist” Martin Koleff, Ton Ton Katsuya moves into the corner space at the Durango Point Retail Center, close to the intersection of Warm Springs Road and Durango Drive and a close neighbor to the Suzuya Patisserie. Koleff has been a force behind local restaurants including Raku and Curry Zen, still serving a katsu and curry menu three miles to east from this latest venture. Without revealing future opening hours, the amber-hued restaurant promises a Japanese menu, including set meals built around a pork or chicken katsu dish, tempura vegetables, a katsu sandwich, a kid’s meal option, brown rice, and hojicha teas, imported Japanese beverages, and yuzu panna cotta for dessert." - Bradley Martin
