"I'm reporting that Copper Top Coffee & Donuts is reopening in Pacific Beach by the end of the year on a busy stretch of Mission Boulevard, bringing back still-warm doughnuts and freshly brewed coffee. Founded in Hillcrest in 2018 and shuttered last spring, the shop originally launched with a high-traffic drive-thru window that owner Josh McCorkle says proved difficult to manage with a menu of doughnuts made to order, which contributed to his decision not to extend the lease on Washington Street. The new Pacific Beach storefront will offer a large selection of doughnuts cooked fresh when ordered and featuring housemade sauces and toppings like salted caramel and marshmallow; bestsellers include 16 Candles, made with house white chocolate, coconut, and sprinkles, and the Elvis, which incorporates peanut butter, raspberry jam, bananas, and bacon. Other menu items include breakfast sandwiches, acai bowls, and smoothies, and the bigger space will allow the shop to expand its coffee and espresso offerings — Copper Top currently uses beans roasted at its sister company in Seattle, though McCorkle says he'd like to eventually open a roastery in San Diego and hopes to open three to four more locations around town." - Candice Woo
