"Chef Jet Tila returns to Las Vegas with a trio of fast-casual restaurants built around a menu that encourages the customer to customize each pan-Asian noodle dish. Dragon Tiger Noodle Co. had plans to open three Las Vegas locations in 2020 — in the Southern Highlands Marketplace, Henderson at the intersection of St. Rose Parkway and Amigo Street, and Spring Valley’s Rainbow Commons retail center. Still to formally announce the three locations, Dragon Tiger Noodle Co. started sharing part of its build-your-own-menu that includes broth options — beef pho, vegan umami, and Chinese chicken — followed by ramen, udon, rice noodles, and gluten-free noodles choices. Protein choices include braised pork belly, grilled chicken, beef brisket, tofu, and a soft cooked egg. Diners can add bok choy, bean sprouts, and nori seaweed along with toppings, sauces, and extra hoisin, chicharron, or braised pork.
