"Old Salt Fish and Bagels is a pop-up restaurant that emerged from Fremont’s Manolin, now offering a breakfast-focused menu. The menu includes bagel sandwiches with lox and other smoked fish, spreads like cream cheese with calabrian chili, urfa bieber, aleppo, and garlic, and a selection of coffee drinks. The focus is on locally sourced, sustainable seafood, including Neah Bay black cod, Idaho whole trout, and Keta and wild caught Coho salmon from the Nooksack Tribe. The establishment uses a Blodgett deck oven for bagel-making and went through two months of testing to perfect their offerings. The pop-up has been successful, selling out regularly since its opening. Co-owner Joe Sundberg hinted at the possibility of incorporating some items into the original menu when Manolin reopens.
