"What started as friendly boils around Austin bars in 2014 evolved into Eastside Boilers, the official project launched in 2017 by Greg Barber and Greg Pratt; both founders bring lifelong boil experience (Barber from Huffman, Pratt from East El Paso), and the team sticks to classic Cajun and Creole seasonings while sourcing many ingredients from local purveyors (they get their andouille from Austin meat market Hudson). Eastside Boilers has popped up around East Austin (including bars like Latchkey and Progress Coffee) and this year built an outdoor kitchen at Willie’s Joint in Buda, serving boils Thursdays through Sundays with ambitions to one day open a dedicated lawn-and-boil space." - Taylor Tobin
