"On the Lower East Side I tried the halal smash-burger spot Holy Cow, located at 34 Canal Street between Ludlow and Essex, where the usual chopped cheese filling appears on a small hamburger bun as a $7 large slider; their innovation is flattening and searing the patty on one side before chopping it for a crunchy, blackened texture, and the "holy sauce" tastes much like the ketchup-and-mayo mix used on the original." - Robert Sietsema
