"Baltimore noodle house Ejji Ramen is scheduled to open its second location inside Bethesda’s Westfield Montgomery Mall next month. The ramen import — pronounced “e-gee” — will sit inside the mall’s food court and offer communal-style seating. Chef Ten Vong, who debuted Ejji inside Baltimore’s Belvedere Square in October 2014, draws from his Malaysian heritage to create Ejji’s lineup of Asian-inspired comfort foods. Think: a mac and cheese “ramen” hot dog that’s tempura battered, fried, and served with apricot wasabi mustard. The menu, packed with vegan options, includes umami-filled ramen bowls, coconut rice bowls, buns, and apps like vegetable gyoza.
